These beans come from a collection of small farms around the village of Pinalum on the western side of the island of Malekula. This island is entirely rural and agricultural. With only ~20,000 residents on the entire island, which is slightly larger than Maui, there is no town to speak of, just one settlement, Lakatoro, with a grocer, hardware shop, gas station and open market.

Made from organic sugar cane grown in South America. The cane juice, rich in molasses, vitamins and minerals, is squeezed from fresh sugar cane, evaporated and crystallized.
Our chocolate is made without the use of additional flavor additives or emulsifiers, such as vanilla or soy lecithin. We like to stay true to the unique flavor of each cacao origin.
